Skirret is hard to find in Australia. It is a perennial, sweet, white root vegetable, which is delicious roasted. Roots can also be roasted to dry, ground and used as a coffee substitute. Prefers moist soil but doesn't like being water-logged. Does best in a rich soil in full sun, but tolerates light shade. Seeds can be tricky to germinate.
